How To Make Humba de Ronda

Ingredients:
  • 1 kilo pork (usually used pork belly), cut into serving pieces
  • 1 bulb garlic, crushed
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 bay leaf (optional)
  • 1/4 tsp. pepper or 1 tsp. peppercorns (optional)

Cooking Procedure:
  1. Prepare all the ingredients listed above.
  2. Wash the pork with plain water.
  3. Marinate the pork with the garlic, soy sauce, and brown sugar for about 30 minutes to an hour.
  4. Combine all ingredients in a big pot and bring to a boil.  Lower heat and simmer for about an hour or until pork belly or hocks is tender.  You may wish to adjust the taste according to your style and liking.
  5. Remove bay leaf and peppercorns (if used) just before serving.  Serve hot.
