Humba is a pork dish made famous by the Cebuanos in Philippines. It is basically braised pork belly marinated with soy sauce and brown sugar. Ideally, black beans, bay leaf and peppercorns are put in but that depends on the preference of the cook. This dish is somewhat related to the Chinese dish pata tim. When the Chinese tradesmen went to Cebu, cebuanos also made their version of the dish, only more sweeter and succulent.
